Recipe Ingredients: 

  • Mutton 1 kg
  • Rice 1 kg
  • Kisan Canola Cooking Oil 1 cup
  • Onion 2 cups sliced
  • Ginger garlic paste 2 tbsp.
  • Salt 1 tbsp.
  • Chili powder 1/2 tbsp.
  • Green chillies 15
  • Tomatoes 2
  • Black cardamom 2
  • Black pepper 1 tsp.
  • Cinnamon 2 sticks
  • Cloves 1 tsp.
  • White cumin seeds 1 tsp.
  • Aalo Bukhara 10
  • Saffron essence 1/2 tsp. mixed with 1/4 cup milk

Recipe Method: 

  • In a pan add 4 cups water with meat, whole green chillies, ginger garlic paste, chilli powder, salt, whole spices and soaked aalo bukhara.
  • Cook for 30 minutes.
  • Add coarsely chopped tomatoes and cook till meat nearly tender.
  • In another pan heat oil, fry sliced onion when brown add 1/4 cup water.
  • Add the tender meat to it; fry well add the left over stock with 3 cups water and boil.
  • Add soaked rice, cook for 10 min when water dries put on dum (indirect slow cooking technique).
  • Lastly add saffron essence and serve with raita.

Chopping Chilies Easily
Remember to apply oil on your hands before chopping green chilies to avoid them from absorbing into your skin.
