Recipe Ingredients: 

  • Dried penne 200gm.
  • 1 can of chopped tomatoes
  • Olive oil 3 tbsp.
  • Butter 2 tbsp.
  • Pitted black olives a handful
  • Garlic cloves, chopped 2
  • Small red chillies finely chopped 1 or 2
  • Crushed red chillies to taste
  • Fresh basil 6-8
  • Salt
  • Black pepper
  • Pinch of sugar
  • Grated Parmesan, to serve
  • Fresh parsley to serve

Recipe Method: 

  • In a pot of boiling water add salt and oil along with pasta and cook the pasta as mentioned on the packet but do not over boil. Drain well and remove in a bowl and toss the hot pasta with the butter.
  • Heat the oil in a frying pan.
  • Add the chilli and garlic to the pan.
  • After about a minute, add the basil leaves and gently fold them in the flavoured oil.
  • Add the chopped tomatoes and cook for few minutes.
  • Season with salt, pepper, and sugar, leave it to simmer for 3 to 4 minutes.
  • Then add the chopped olives and some fresh basil leaves.
  • Pour over the pasta and serve garnished with parmesan and fresh parsley.
