Recipe Ingredients:
- Dried penne 200gm.
- 1 can of chopped tomatoes
- Olive oil 3 tbsp.
- Butter 2 tbsp.
- Pitted black olives a handful
- Garlic cloves, chopped 2
- Small red chillies finely chopped 1 or 2
- Crushed red chillies to taste
- Fresh basil 6-8
- Salt
- Black pepper
- Pinch of sugar
- Grated Parmesan, to serve
- Fresh parsley to serve
Recipe Method:
- In a pot of boiling water add salt and oil along with pasta and cook the pasta as mentioned on the packet but do not over boil. Drain well and remove in a bowl and toss the hot pasta with the butter.
- Heat the oil in a frying pan.
- Add the chilli and garlic to the pan.
- After about a minute, add the basil leaves and gently fold them in the flavoured oil.
- Add the chopped tomatoes and cook for few minutes.
- Season with salt, pepper, and sugar, leave it to simmer for 3 to 4 minutes.
- Then add the chopped olives and some fresh basil leaves.
- Pour over the pasta and serve garnished with parmesan and fresh parsley.
