
Fiery Lamb Chops With Black Olives
Recipe Ingredients:
- Lamb chops double cut 6
- Olive oil as required
- Worcestershire sauce 1 1/2 tbsp.
- Balsamic vinegar 1 tbsp.
- Garlic chopped fine 3 cloves
- Oregano (dried) 1/2 tsp.
- Salt to taste
- Crushed black pepper to taste
- Butter 2 tbsp.
- Fresh red chilli deseeded and chopped fine 1
- Juice and zest of 1 lemon
- Black olives sliced 12
- Crushed red chillies to taste
Recipe Method:
- Flatten and trim lamb chops of any excess fat.
- In a bowl whisk the balsamic, Worcestershire, olive oil, garlic, salt, pepper and crushed red chillies.
- Also add oregano, lemon zest and lemon juice. Marinate for 30 minutes or overnight.
- In pan add the butter along with oil and place the chops on high heat, reserve the marinade.
- Cook until meat on either side till lightly browned.
- Decrease the heat, add the olives and reserved marinade.
- Cook along with 2-3 tbsp. water until meat is tender, add the red chilli.
- Serve on a bed of greens or along with some baby potatoes.
