Recipe Ingredients:
- Baby spinach leaves 4 to 5
- Rocket leaves 6 to 8
- Red pomegranate 1 cup peeled
- Walnuts handful
- Feta cheese or white cheese crumbled 50 gm.
- Salt
- Black pepper
- Sugar 1/2 cup to caramelize walnuts
For the dressing:
- Raspberry jams 3 tbsp.
- 1/4 cup virgin olive oil
- 1 tbsp. balsamic vinegar
- Honey 1 tsp.
- Mustard 1/2 tsp.
- Salt and pepper to taste
Recipe Method:
- Mix all the ingredients for the dressing and gradually add the oil.
- To serve layer the leaves and pomegranate and finish with some crumbled cheese, caramel walnuts, and the dressing and serve immediately.
